If you are using RPMs for Python installation, did you ensure that you installed the python-dev package for Python 2.5? Also, are you doing a 'restart' or Apache, or a 'stop' and then 'start'. If you do just a 'restart' it may not unload the old mod_python properly, you must do a 'stop' and 'start'.
